Q & A with Scott Hill
Henry VIII is one of the local gems in Bermuda and has created great food for over 35 years. Have you made any additions to the menu reflecting your background?
I’ve been a part of the dedicated Henry’s team for few years and I agree with you without the doubt that Henry the VIII is one of the places in Bermuda that offers a wide variety of great food for locals and visitors. Being a chef from Sri Lanka, I added a little Asian touch to the menus, which I think expands the variety that we offer at Henry’s.
Sushi is one of the new additions to Henry VIII. What can our readers experience with your sushi bar?
Yes Henry’s SUSHI BAR is the latest addition and we are lucky to have two very experienced sushi chefs behind the counter. It’s a great place to spend the evening and experience the creations of our chefs from all kinds of tempuras and our own moongate roll, court jester roll and six wives’ roll.
What is your favorite Bermuda fish to cook and why?
Bermuda rockfish is my favorite. I fell in love with its distinctive flavor and subtle texture, and it is one of our biggest sellers as well. You can find it in our menus and in our famous fish chowder. Our Bermudian chef Rhonda has her own way of cooking rockfish which you can find in our lunch menu. Availability throughout the year from Bermuda seas makes it even better so I can have it available for our customer’s everyday.
Henry VIII is going into BBQ in a big way. Please tell us about your new BBQ patio.
Our BBQ patio is already in place and will start operations in the summer, which is going to be one of the places to be on the south shore with the beautiful ocean views. We invite everyone to come and enjoy relaxing summer evenings with local and imported prime cuts of meat and refreshing drinks at Henry’s BBQ patio.
Sunday brunch is a great way to connect with family and friends after a hard week at work. Henry VIII without a doubt has one of the best brunches on the island. Outline some of the highlights for our potential Sunday afternoon diners.
Homely atmosphere and the friendly staff along with a wide variety of local and international cuisine is what makes us one of the best places to spend the Sunday afternoon. Refreshing salads, cold seafood, freshly made sushi and hot soup is what we offer to start with and in the breakfast corner expect codfish and potatoes and other breakfast dishes are our latest additions. In the hot section you can find roasts, an array of local and international dishes along with, of course, my special spicy curry. There is a good choice at the king’s dessert table and yes the Henry’s bread and butter pudding. With the extended patio and beautiful south shore views Henry’s is a place like no other to relax and enjoy the weekend with family and friends.
